Rustic Crumb Pasta

Just 6 days more... we are at the final countdown for vacations.
This year I decided to take August off to rest and spend some (really needed) time with my family. Some days on the coast with my sister and friends, some days back home, and hopefully some weekends out. I am so happy about it.
Since I will be 4 weeks out, I have to think about all the possible things we will need there... including food that I need for my diet (even that my mum told me that she found most of the food I need). But... my head is in full speed. I am already thinking about new projects and new things that I would like to work on from September. I hope August will help me sorting out and putting on paper some of the ideas. Hope to share some of them with you soon.

And yes... pasta of the week... it was such a discovery! I think this pasta is a complete winner!! So easy to make and so, so good. It has crunchiness from bread and dry tomato crumbs and creaminess from buffalo mozzarella.
Definitely my favourite!!

Só mais 6 dias... estamos na contagem decrescente para as férias.
Este ano decidi tirar Agosto para descansar e passar um tempo (realmente necessário) com a minha família. Alguns dias na costa com a minha irmã e amigos, alguns dias de volta a casa e, espero, alguns fins-de-semana fora. Estou muito feliz com isso.
Como vou estar 4 semanas fora, tenho de pensar em todas as coisas possíveis que vamos precisar por lá... incluindo a comida que preciso para a minha dieta (apesar de a minha mãe me ter dito que ncontrou a maioria dos alimentos que eu preciso). Mas... a minha cabeça está na velocidade máxima. Já estou a pensar em novos projetos e novas coisas nas quais gostaria de trabalhar a partir de Setembro. Espero que Agosto me ajude a ordenar e por no papel algumas das ideias. Espero partilhar algumas delas convosco brevemente.

E sim ... a pasta da semana... foi uma descoberta! Acho que esta pasta é completamente vencedora! Tão fácil de fazer e muito, muito boa. Tem o estaladiço das migalhas de pão e tomate seco e a cremosidade da mozzarella de búfala.
Definitivamente a minha favorita!


Rustic Crumb Pasta

200g spaghetti
100g sourdough bread
8 sun dried tomato halves
2 cloves of garlic
sea salt
1,5 tbs olive oil
few small basil leaves
1 small buffalo mozzarella, halved
2tbs balsamic vinegar
extra olive oil to serve


Cook the pasta in a large pan of boiling water for 8-10 min. Drain and return to the pan to keep warm.
While the pasta is cooking place the bread, tomato, garlic, salt and oil in the bowl of a food processor and process until mixture resembles small crumbs.
Heat a frying pan over medium heat. Add crumb mixture and cook, stirring, for 4-5min or until crumbs are golden.
Toss the crumble and basil with the pasta.
Divide between serving plates and top with mozzarella. Drizzle with olive oil. Serves 2.

200g de espaguete
100g Pão de fermento
8 metades de tomate seco ao sol
2 dentes de alho
sal marinho
1,5 colheres de sopa de azeite
algumas pequenas folhas de manjericão
Uma pequena mozzarella de búfala, cortada ao meio
2 colheres de sopa de vinagre balsâmico
azeite extra para servir


Cozinhe a pasta numa panela grande com água a ferver durante 8-10 min. Escorra e volte a colocar na panela para manter aquecido.
Enquanto a massa está a cozer, coloque o pão, tomate, alho, sal e azeite no copo de um robot de cozinha e triture até que a mistura se assemelhe a migalhas pequenas.
Aqueça uma frigideira em lume médio. Adicione a mistura das migalhas e coza, mexendo, durante 4-5 minutos ou até que as migalhas fiquem douradas.
Misture a migalhas e o manjericão com a pasta.
Divida pelos pratos a servir e cubra com mozzarella. Regue com azeite. Serve 2.

  8. This looks delicious!! Definitely going to try it. We already have Sanda's lentil soup every couple of weeks, perhaps now we'll have a favorite Sanda's pasta to add to our rotation. :)

  9. Olá Sanda! Sou uma grande fã do seu blog, o qual acompanho com bastante assiduidade! No entanto sou ainda uma novata no que de cozinha se trate. Onde posso encontrar o "sourdough bread" ou que outro tipo de pão posso utilizar como substituto?

    1. Sourdough bread eu nao encontrei em Lisboa.Eu costumo fazer e existem algumas receitas no blog. Mas pode usar qualquer outro que esta mais compacto e com crosta dura e que da para triturar.
